Healthy Broccoli Spinach Soup

Rich, creamy, tasty and easy to make from scratch, this Broccoli Spinach Soup will soon be a staple on your dining table. Most creamy soups are loaded with cream or flour, but not ours! We use a variety of vegetables to thicken the soup, with just a tablespoon of sour cream. Not to worry though, this dish tastes just as cozy, comforting and super delicious!

Instructions

1. Cut ingredients

  • Cut broccolis, celery, onion, carrots into chunks.


2. Boil soup

  • Heat up oil in a stock pot.

  • Stir fry onions, then add celery, carrots and broccolis.

  • Add in stock. Bring to boil and simmer till carrots are soft (around 30min).


3. Blend soup

  • Add spinach. Bring to boil till spinach are soft (around 5-10 min).

  • Blend the soup in the pot until creamy.

  • Bring the soup back to a boil.

  • Add salt to taste and turn off heat.


Garnish and Serve!

Serve hot with a drop of sour cream, crushed roasted walnuts and black pepper.
