Add 1 tbsp of oil to a heated wok and fry prawns for 2 minutes or until they turn opaque.
Add in squid and stir-fry for 1 minute or until opaque.
Dish and set aside.
In a pan on medium heat, heat up 2 tbsp vegetable oil
Fry ginger, dried shrimps, pumpkin cubes, and sliced mushrooms until fragrant.
Add rice, 1 tbsp soy sauce and 1⁄2 tsp white pepper.
Stir-fry until well mixed and rice takes on a little bit of colour.
Season to taste with additional soy sauce/salt and white pepper.
When rice and all other ingredients are nice and fragrant, add pre-cooked seafood and mix well.
Bring wok off heat and drizzle fried rice with some sesame oil.
Mix in spring onions, reserving 1 tsp for garnish.
Garnish fried rice with the remaining spring onion and serve hot
