Cut potatoes into ¼ inch thick strips
Soak potatoes in cold water for about 30min.
Drain and pat dry. Transfer potatoes into large mixing bowl.
In a small bowl, mix cornstarch, garlic powder, paprika and black pepper. Mix well.
Add olive oil to the sweet potatoes and mix well so the oil covers the surfaces of the fries.
Add the seasoning mix.
Toss till the fries are evenly coated.
Arrange and spread the fries evenly onto a lined baking tray.
Bake at 220°C for 30 minutes, flipping the fries at every 10min interval.
Remove from heat. Season fries with salt and serve.
