Cut bacon into small strips and pan fry with butter until slightly crispy
Combine all ingredients one by one in a large bowl and mix until it becomes a thick mixture – (dry ingredients then followed by wet)
Add crispy bacon with oil in and mix well
| Adding the oil rendered from bacon and butter adds extra aroma to this recipe, do not discard that oil.
Preheat oven to 180°C (fan-forced).
Line muffin tray with muffin cups
Divide the mixture equally into the muffin cups
Bake for 15-20 minutes until golden brown
These muffins are great as breakfast or as a snack!
