On Keto but love chicken rice? Now, replace your rice with keto-friendly cauliflower. It’s a great substitute for carb-heavy rice. You get the same garlicky, fat-infused chicken flavour mixed thoroughly into creamy crumbed up cauliflower. Trust me, this is a winning keto chicken “rice” recipe that rivals Singapore’s top hawker food.

Instructions

1. Crumb Cauliflower

  • Wash the cauliflower and let it dry completely.

  • If you want to use a chopper, cut the cauliflower into large chunks then chop until pieces are rice-sized.Otherwise, use a grater to grate the cauliflower into rice-sized pieces.

  • Optional: transfer the chopped cauliflower onto a clean paper towel and press the juices out to dry even further. Or, place the chopped cauliflower into a sifter on top of a bowl then place it in the chiller for about 30 minutes.


2. Saute Cauliflower Rice

  • Add chicken to plate of rice and add sambal for heatIn a wok with ghee/oil, saute garlic and ginger until fragrant. For those of you who don’t like to eat whole garlic, you may want to remove the garlic at this point.

  • Add Janti’s Keto Bouillon and water (or chicken broth) into the wok

  • Add the cauliflower rice. Cook until soft.

  • Once it’s cooked to your preferred doneness,strain it one more time to reduce the water.


Garnish and Serve!
