In a pan on medium-high heat, heat up 4 tbsp vegetable oil and stir-fry beaten eggs for 1 to 2 minutes to scramble.
Push scrambled eggs to the side of the pan and add prawns, chicken ham and mixed vegetables.
Stir-fry for 5 to 7 minutes until prawns are cooked.
To elevate this dish, you can substitute chicken ham with char siu or lup cheong.
In the same pan, add rice and mix well.
| Leftover rice from the day before are great for this recipe.
Season with 2 tbsp soy sauce and ½ tsp pepper.
Stir-fry for 3 to 5 minutes and season to taste with additional light soy sauce if needed.
Remove pan from heat and toss in spring onions. Mix well.
Transfer the fried rice to a serving plate and serve hot.
