Pluck away unwanted parts of the watercress and cut away the tail end.
Wash and soak for 10mins.
Drain and set aside.
Bring a pot of water to boil, blanch the pork ribs in boiling water with a few pieces of ginger before using.
In a soup pot, bring 2.5L of water to boil and add both types of apricot kernels, red dates, and pork ribs.
Bring to boil. Then turn to lowest heat. Allow the soup to simmer for at least 1.5 –2 hrs.
Add watercress and wolfberries and simmer for another 20 minutes
Season with salt to taste. Serve hot.
