In a small bowl, whisk together the soy sauce, garlic, sugar and sesame oil.
Heat up a pan with oil over medium-high heat.
Add prawns, peppers and carrots and stir fry for 1 minute
Pour the sauce on top. Cook for about 2-3 minutes or until prawns are pink
Whisk the chicken broth and cornstarch in a small bowland add it to the pan with the broccoli and sugar snap peas.
Stir until incorporated and then cover and cook 3 minutes or until broccoli is tender and sauce has thickened.
Turn off heat.
Garnished with chopped scallions and serve with rice.
