Heat up oil in pan
On small-medium heat, put white bait first, then garlic and stir fry.
When white bait turns slightly pale golden, dish out half portion to be used for garnish. Set that aside.
Turn on medium to high heat, put in lady’s finger, stir-fry with the remaining white fish for about 2 minutes
Add in chilli padi and salt, continue to stir-fry for about 1 min
Cover with lid for about 30s-1minute before turning off heat.
Add salt to taste if required.
Garnish with more fried white bait. | To cut down salt content, it is recommended to wash and rinse white bait at least twice. Pat dry before frying to prevent the oil from splattering.
