In a pot filled with boiling water, add pork and boil for 5 minutes.
Skim off the scum from the top of the boiling water, then remove the pork from pot and set aside.
Discard water.
In a second large pot filled with boiling clean water, add pork and all the remaining ingredients
Bring to a boil, then cover and reduce heat to low.
Simmer at medium low heat for 45 minutes.
After 45 minutes, season with salt to taste, then remove from heat.
