Snow Fungus Dessert

Snow fungus contains dietary fibers that helps to lower cholesterol in the foods that we eat but also control the sugar absorption. It basically acts like a filter for your body. It also makes you even more beautiful by replenishing the collagen that we need to make our skin nice and bouncy.

Instructions

1. Rinse dry ingredients

  • Rinse the red dates, longans with clean water before using.

  • Soak the dried snow fungus in warm water until soft and plump. Discard water and use scissors to cut snow fungus into smaller piecesand then trim off the yellowish crusty part at the bottom. Discard those.


2. Boil the dry ingredients

  • Place the snow fungus, red dates and longans in a large pot.

  • Add water and bring to a boil and then lower the heat to let it gently simmer for the next 20 mins. Cover with lid leaving a gap.

  • After 20mins, add gingko nuts and continue simmering for 10mins.


3. Add sugar

  • Everything should be softened. If not, let it simmer a bit longer.

  • Add rock sugar and stir until melt.

  • Taste for sweetness, add more if preferred

  • Then add goji berries and cook for another 5 mins and then turn off the heat.


Plate and Serve!

This dessert can be served warm or chilled.
