Jam-packed with nutritious goodness, the Korean Ginseng Chicken Soup (Samgyetang) is said to be the perfect summer dish fight the heat. The chicken is lovingly stuffed with soaked glutinous rice and gently simmered with garlic, ginger, and the super-herb of Asian cuisine, ginseng, said to aid in boosting energy and the immune system. Serve piping hot with rice, chopped scallions, salt and pepper on the side!

Instructions

1. Dipping Sauce

  • Combine salt, sesame seeds, ground black pepper, and sesame oil in a small bowl and mix well. Set aside.


2. Cooking the Chicken

  • Strain the glutinous rice

  • Stuff chicken with rice, 1 ginseng, 2 jujubes, and 8 garlic cloves.

  • In a deep pot, bring water to a boil

  • When water is boiling, lower chicken into the water. Cover and cook over medium high heat for 30 minutes.

  • Turn down the heat to medium low and cook another 40 minutes until the chicken,ginseng, and rice turn soft. Add a little hot water if needed.


Plate and Serve!

To serve in earthen ware pot, add a scoop of soup, then preheat the pot. Carefully ladle in the chicken and add more soup. Sprinkle some spring onion and eat with the sesame dipping sauce
