Combine salt, sesame seeds, ground black pepper, and sesame oil in a small bowl and mix well. Set aside.
Strain the glutinous rice
Stuff chicken with rice, 1 ginseng, 2 jujubes, and 8 garlic cloves.
In a deep pot, bring water to a boil
When water is boiling, lower chicken into the water. Cover and cook over medium high heat for 30 minutes.
Turn down the heat to medium low and cook another 40 minutes until the chicken,ginseng, and rice turn soft. Add a little hot water if needed.
To serve in earthen ware pot, add a scoop of soup, then preheat the pot. Carefully ladle in the chicken and add more soup. Sprinkle some spring onion and eat with the sesame dipping sauce
