One-Pan Paneer Palak Baked Gnocchi

Palak Paneer is a smooth rich spinach gravy with cubes of Indian cottage cheese. A rich, already creamy dish, it’s made even better when you combined it with any kind of starch just to cut its strong flavour - from rice, prata, even pasta. And here, we’ve combined Palak Paneer with gnocchi in this One Pan Baked Palak Paneer recipe. A great family dinner, or to bring to a potluck, especially if your crowd favours Indian and Western cuisine - it’s a perfect combination of both!

Instructions

1. Prepare to cook

  • Preheat the oven to 200C.

  • Get a deep, ovenproof saute pan on a medium heat.


2. Cook the spinach sauce

  • Melt the butter, then add the chopped onions, garlic, green chillies, cumin seeds, ground coriander and garam masala and saute until fragrant.

  • Add the chopped spinach and salt, and saute until wilted.

  • Add the cream, water and cubed paneer, and bring to a simmer.


3. Cook the gnocchi

  • Add the gnocchi and cook in the simmering sauce for 2 minutes.

  • Take the pan off the heat, and top the gnocchi with shredded mozzarella.Bake in the oven for 10-15 minutes, until golden brown and bubbling. Serve!


Plate and Serve!

| This dish also works with other pasta, if you can’t find gnocchi easily. Just make sure to cook it until al dente first, if you’re using dried pasta.
