Avocado Gula Melaka Smoothie

Avocado is the fruit of the millennials and we often see it on toast or in a hearty salad. Well, it is time for an upgrade, here is a tasty smoothie version that is buttery and sweet with a deep caramel flavour coming from the gula melaka. Let's also not forget that this delicious smoothie is packed with vitamins and antioxidant. We do warn you, this is highly addictive, you might find yourself slurping your first glass of this fast and asking for seconds.

Instructions

1. Toast and crush walnuts

  • In a pan on medium heat, toast walnuts for about 5 minutes, stirring constantly. Remove and let cool. Once cooled, crush with the flat of a knife or a rolling pin. Set aside.


2. Prepare avocado and melt gula melaka

  • Cut avocados in half, then deseed and scoop out flesh. Set aside.

  • In a pot on medium heat, melt gula melaka, stirring constantly. When fully melted into a syrup, set aside to cool.


3. Blend smoothie

  • In a blender, add avocado, ice, milk, and 4 tbsp melted gula melaka. Blend for 2 minutes, or until desired consistency.


Garnish and Serve!

Pour into a tall glass and top with crushed walnuts.
