The Philippine city of Bacolod, just off Manila, is known for Chicken Inasal, an addictively tangy grilled chicken. And at Manokan Country, it’s soaked and barbecued with a spiced marinade of coconut vinegar, citrus calamansi and even more secret spices. You then eat it in parts – an intensely spiced chicken heart, crispy chicken legs and more. And it’s all eaten with fat-infused chicken sauce over a white rice that absorbs everything.
